Special project: yeast hunting from Japanese wisteria Fuji
We did yeast hunting from Japanese wisteria in Kyo-tango city, the north part of Kyoto prefecture, in May 2012. The sound of Fuji, Japanese name of wisteria, means ee all rightff ee being safeff ee only oneff eealteregoismff. Additionally, since its branches are extended very well and its seeds can surely bud, people believed that Fuji is a kind of amulets for prosperity of@posterity and preventing bad luck. In this project, we are trying to isolate excellent yeast for making the best sake.Tasting party
The Japanese Sake and distilled spirit using the yeast isolated from Fuji flowers were completed. We tasted these Japanese sake, distilled spirit and dishes on 27 Feb.
Collect Fuji flowers
©We collected purple pretty flowers of Fuji and isolated lots of yeasts, which would be sent to Takeno brewery to make tasty sake.
